Relax, it's just food. If it's burnt, over salted, or under seasoned there will be a new meal tomorrow. No one will come to your house and smack your hand if you substitute parsley for cilantro. The world will not end if your lettuce was not grown within 10 miles or if your pork is not from heritage breed pigs. Life is short; enjoy it!
